Baked golden brown, this Bavarian specialty can be eaten either as a dessert or as a main course. Apple pancakes are a traditional pastry from Bavaria and are usually eaten as a main course. This delicious pastry consists of apple rings pulled through a thick batter, similar to the batter for Kaiserschmarrn, and baked in a pan until golden brown. After baking, the apple pancakes should be immediately sprinkled with cinnamon sugar and served while still warm. Sour apples such as Boskop, Braeburn or Elstar are well suited. This creates a wonderful combination of acidity and sweetness.
