My carrot and apple salad is super easy to make, very tasty and healthy too. This recipe with lemon juice, honey and oil is the perfect combination of sweetness and sourness and goes great with barbecues, as a side dish to hearty meals or as a snack with some bread for in between.

Raw vegetable salads are not only very healthy, but are also very tasty. My carrot apple salad is no exception. The special thing about my recipe for this great raw vegetable salad is that the ingredients are not finely grated, but cut into juliennes and cubes. This makes this salad extra crunchy.

As already mentioned, this raw vegetable salad is not only extra delicious, but also very good for your health. Especially in the winter months, carrot and apple salad is an excellent source of vitamins. The vitamins A and C contained in this salad make your immune system fit for the cold season. What ingredients do I need for carrot apple salad?

You only need a handful of ingredients for this carrot and apple salad. Apart from the carrots, apple and lemon, these are ingredients that you have in stock at home anyway. Besides these main ingredients, you only need honey and canola oil, as well as salt and freshly ground pepper to taste.

Fresh carrots

The flavours and freshness of the ingredients are very important in raw vegetable salads. That’s why you should always go for high quality when choosing carrots. Of course, it is best to grow carrots in your own garden. Alternatively, you can buy your carrots at the weekly market or get organic quality from the grocery store. If the carrots are firm, do not bend and have no black spots, they are still very fresh and the ideal basis for raw food dishes.

The ideal apple type

Firm, crunchy and finely acidic apple types such as Gloster or Braeburn are very suitable for preparing carrot-apple salad. As with carrots, use local apples from your own garden or from the weekly market.

In addition to the carrots and apple, you will also need the juice of half a lemon, 2 tablespoons of canola oil, 1 teaspoon of honey, as well as salt and freshly ground pepper to taste.

How to make carrot apple salad?

Peel and cut the carrots

First you need to peel the carrots and julienne them. I used a vegetable slicer with a julienne insert. This gives you evenly sized vegetable sticks of no more than 3 cm.

Hint: A julienne cut results in vegetable sticks about 1.5 – 3 mm wide and 1.5 – 3 cm long. The easiest way to julienne is to use a vegetable slicer with insert or a julienne cutter. If you do not have either at hand, you can also cut the carrots with a knife.

Cut the apple pieces

First squeeze half a lemon. Then peel the apple and cut it into small cubes. Put the sliced apple in a bowl and mix immediately with the lemon juice so that the apple pieces do not turn brown.

Make the dressing for the carrot apple salad

Put the carrot pieces and apple cubes in a large enough bowl. Add 1 tsp honey and 2 tbsp canola oil and mix well so that the honey can combine with the oil and lemon juice. Season to taste with salt and freshly ground pepper and leave in the fridge for about 20 minutes.

1 apple, about 0.45 lbs / 200 g
1 tsp honey
2 tbsp canola oil
½ lemon
Salt

Instructions

  1. Peel the carrots and julienne them. I used a vegetable slicer with julienne insert for this.

  3. Put the carrots pieces and apple cubes in a large bowl. Add 1 tsp honey and 2 tbsp rapeseed oil and mix well so that the honey can mix with the oil and lemon juice.
  4. Season with salt and freshly ground pepper and leave in the fridge for about 20 minutes.
  5. Mix well once more and serve. Enjoy your carrot apple salad.
