I love mashed potatoes. When I was a student at university it was one of my absolute favorite side dishes in the canteen. After a long day at the university there was nothing better than dropping into the canteen to fill your stomach with this fine comfort food. Of course, only if it was not sold out. Unfortunately, this always happened about 5 minutes after the university canteen opened it’s business.

I’m still crazy about mashed potatoes, that hasn’t changed. But today I just make my own mashed potatoes when I want to have it. Lucky me that mashed potatoes are very easy to prepare.

Therer are so many variations of mashed potatoes floating around the web. And of course everyone has the best mashed potatoes recipe ready. With butter or without, vegan, with oil, made from boiled potatoes or potatoes in their jacket, sometimes even with waxy potatoes, there seems to be no limit in creativity at all.

My recipe is rather simple. I use floury potatoes which I peel and boil in salted water until soft. Made with milk and butter, refined with freshly grated nutmeg and seasoned with salt to taste, that’s just the thing I need after working all day long. And let’s be honest. In today’s fast-moving and hectic times, we all need food making us feel good more often. And mashed potatoes are perfecty good for it, at least for me. Let’s start πŸ™‚

Mashed Potatoes – How is it made?

Mashed potatoes are actually super easy and relatively quick to make. So there’s no reason to use an instant version, which is miles behind the taste of homemade mashed potatoes.

Boil the potatoes

First, peel and cut the potatoes pieces. Place the potatoes in a pot and cover completely with cold water. Salt the water and let the potatoes cook with lid on for about 20 minutes. Check from time to time whether the potatoes are already done. You can easily determine this with the fork test. The potatoes are ready if soft and tender.

Tip: Try cut the potatoes into pieces of the same size so that there are no different cooking times.

Drain the potato and heat up the milk

When the potatoes are cooked, leave them in a colander to drain and then put them back in the pot. This will evaporate the remaining moisture. Meanwhile, heat up the milk in a saucepan without bringing it to a boil.

Mash the potatoes

Add the butter to the potatoes and use your potato masher. Gradually pour in the milk and mix gently with a whisk until the consistency is creamy and smooth.

Tips:

  • If the butter comes straight from the fridge and is very hard you can of course heat it up together with the milk.
  • When working in the milk, be careful not to work the mashed potatoes too much. Otherwise the starch in the potato cells can gelatinize. For a fluffy consistency the cell walls of the potato must remain as undamaged as possible. Therefore, please do not use a hand blender for the production.
  • Alternatively, you can also press the potatoes through a potato ricer.
  • When you realize that the puree has reached the ideal consistency for you, just stop at that point. This is completely fine. Some like a creamy puree while others don’t.

Season to taste, serve and enjoy

Season with salt and grated nutmeg, serve and enjoy. If you like, you can also pimp your mashed potatoes with fried onions, chives, fried mushrooms, fried breadcrumbs or croutons. Bon appetit πŸ™‚

2ΒΌ lbs / about 1000 g floury potatoes
4 tbsp / about 50 g unsalted butter
1 cup, metric, about 250 ml whole mlik
pinch of nutmeg
salt

Instructions

  1. Peel the potato, cut into small pieces and place in a saucepan. Cover the potato pieces completely with cold water, add a little salt and cook covered for about 20 minutes. You can use a fork to test whether the potatoes are already cooked soft.
  2. When the potatoes are cooked, leave them in a colander to drain and then put them back in the pot. This will evaporate the remaining moisture. Meanwhile, heat the milk in a saucepan without bringing it to a boil.
  3. Add the butter to the potatoes and mash it with a potato masher. Gradually pour in the milk and mix it gently with a whisk until creamy and smooth consistency.
